Great with pitta or wraps or on almost anything.

500 – 750ml yoghurt, Greek (recommended), double cream or low fat
1 large English cucumber
2 cloves  garlic
freshly chopped or dried mint – if dried, about 2 flat teaspoons
salt and pepper
a drizzle of olive oil

I don’t drain cucumber, as I as I don’t grate it and make it to use immediately. I also discard the pips/pulp in the middle.
Peel an English cucumber and slice lengthways into quarters. Cut a V along the length to remove the pips.
Chop cucumber into 1cm cubes and chuck into a bowl.
Chop or mince the garlic and add to the cucumber.
Add mint, salt and pepper and mix
Drizzle with olive oil and there you go.
